Being a proud Otago Highlander from Dunedin (based on it’s sister city, Edinburgh) I thought it was appropriate to make a raw vegan, green smoothie in it’s honour.

To make this smoothie you need some homemade almond milk. Make the basic milk with 2 tablespoons of coconut oil.

300 mls of almond milk
1 teaspoon of acai berry powder
2 large handfuls of organic scottish kale
1 teaspoon of spirulina (Hawaiian Pacifica is the best)
4 frozen bananas.

Blend and sprinkle with hemp seeds and a few almonds.


Triple Berry Smoothie

1 cup of frozen strawberries
1 cup of frozen boysenberries
1 small handful of goji berries
2 tablespoons of hemp seeds
1 teaspoon of macca powder
2 bananas
400 mls of almond milk

Blend and sprinkle with some organic shredded coconut.
This will make at least 3 hungry people happy 🙂

I have to say that this is one of the yummiest smoothies I’ve ever made. You’ll need:

Home made almond milk made by blending: 1 cup of almonds (soaked for at least 4 hours); 4 cups of filtered water; pinch of salt; 2 tablespoons of coconut oil; and 1/4 cup of maple syrup (yes not raw but healthier than raw agave).
Whiz it up and then strain it through your nut bag.

Take 300 mls of your almond milk and blend it with 10 -12 mint leaves; 2 handfuls of cacao nibs; and 3 bananas (frozen if you prefer).
Pour and decorate – if you are into a little food porn 😉

Raw Vegan Mini Blueberry Cheesecakes

I made these for the first time today. I made 10 but in hindsight, I should of made less in order to have a thicker base. I used paper cupcake cups and put them in a muffin tin to help keep the shape.

For the Crust

1 cup almonds

1 cup pitted, organic medjool dates

For the Filling

3 cups blueberries

2 teaspoons of acai berry powder (optional)

1 1/2 cups cashews

1/2 cup pure maple syrup

2 tablespoons fresh organic apple juice

2 teaspoons ground organic cinnamon

1/2 teaspoon pure vanilla extract

Pinch of celtic salt

6 tablespoons melted cacao butter

Instructions: For the Crust
1. Grind both ingredients together in a food processor.
2. Add 1 teaspoon of water if the mixture is too crumbly.
3. Press the crust into your cups. Set aside…

Instructions: For the Filling
1. Combine all the ingredients except the cacao butter,and blend really well – until completely smooth.
2. Add the butter and blend again.
3. Pour the mixture over the crust(s)
4. Chill in the freezer until firm.
5. Garnish with blueberries, nibs or something you love.

This was a little decadence for a Sunday afternoon.

300 mls of almond milk
3 – 4 large frozen bananas
1 tspn of cacao powered
1 tspn of maca powder
1 tspn of acai berry powder

Whiz it up in your blender and pour into your favourite glass. Sprinkle with cacao nibs and pumpkin seeds.

Serves 2 but it’s so good you may want to keep it to yourself 🙂

2 bananas
1 cup of frozen boysenberries
1 teaspoon of maca
1 teaspoon of acai berry powder
1 teaspoon of cacao powder
Coco-lyte and 250 mls of water
Sprinkle with raw cacao nibs, sunflower and pumpkin seeds.

This is my favourite smoothie at the moment. For a creamy taste, replace the coco-lyte and water with nut milk.
Acai berry powder is chock full of nutrients and tastes amazing in smoothes. I drank it constantly during one of my pregnancies.

Clean, Green Thick-Shake

Clean, Green Thick-Shake

You’ll need: Blender
2-3 frozen bananas
Almond milk (homemade) or water
Hemp seeds
Cacao nibs

Blend liquid of choice with the bananas and kale. Don’t use too much liquid because you want it nice thick. (unless of course you don’t like it thick 😀 )  Pour and sprinkle with hemp and nibs. Too easy!
Tip: If you find kale to be too bitter for your taste, de-stem the leaves first.
